UBE BIKO (STICKY PURPLE RICE WITH COCONUT MILK AND CARAMEL)

Cooking time: 45 minutes
Yields: Serves 8
3 cups glutinous rice flour
4 cups water
pandan leaves
2 cans coconut milk
2 cups brown sugar
1 cup ube powder
ube extract for deeper ube/purple color
Place rice in a pot and using medium heat, cook for 10 minutes.
Cover and adjust heat to low and cook between 5 to 7 minutes
Turn off heat and set aside.
Meanwhile, using another pot, combine coconut milk, ube powder, sugar and ube extract.
Use medium heat and stir constantly for 10 minutes.
Bubbles will form after 10 minutes, adjust heat to low and keep stirring for 5 minutes until thick.
Slowly add rice.
Continue to stir for 10 minutes until all combined and sticky.
Brush a glass baking dish with coconut oil or melted butter.
Add sticky rice. Flatten top using a spatula or a back of a spoon coated with cooking spray.
Cool down.
Sprinkle coconut curd/latik on top before serving.
Coconut curd/latik
Place 2 cans of coconut cream in a pot.
Cook under low heat until curd is formed @1 hour.
Stir occasionally.
