Hi and welcome! Today is Monday and that means MEATLESS Monday at our house. Of course, I am meatless every day but on Mondays, my husband, Dave is also meatless...most of the time. There are TONS of vegetables in this dish. It is kid friendly. My granddaughters loved it. Its ingredients are flexible. Try it with what you have on hand OR what's growing in your garden. It's made in one pot - pasta and all! No Draining.

1 tablespoon vegetable oil
1 large onion, chopped
1 bell pepper (any color)
1 large carrot, diced
8 ounces mushrooms, sliced
5 cloves garlic, chopped
1 jalapeno pepper, seeded, diced (optional)
1 14.5 ounce can diced tomatoes (or chopped fresh tomatoes)
1 medium zucchini, diced
1 lime, zested and juiced
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon Italian seasoning
3 cups vegetable broth
½ cup white wine
12 ounces spaghetti or other long pasta
1/3 cup nutritional yeast
10-12 basil leaves (or 1 tablespoon dried basil)
1 12 ounce package frozen spinach, thawed and squeezed in kitchen towel to remove water
