This authentic punjabi pulao is very delicious and super easy to make. Must try out this pulao recipe you will love it. Meat lovers will love it.

PUNJABI MUTTON PULAO
Ingredients for yakhni:
1. Mutton 1kg
2. Coriander seeds 2tbsp
3. Green cardamom 4-5
4. Bay leaves 2-3
5. Star Anise 1
6. Cinnamon 2 sticks
7. Cloves 6-8
8. Cumin seeds 1tbsp
9. Black cardamom 1
10. Onion 1 small
11. Garlic cloves 3
12. Water 1litre

Ingredients for pulao:
1. Oil 3/4cup
2. Coriander seeds 1tbsp
3. Bay leaves 2
4. Star Anise 1
5. Cloves 6-8
6. Cinnamon 1 stick
7. Black cardamom 1
8. Cumin seeds 1tsp
9. Onion 2 medium sliced
10. Ginger & garlic paste 2tbsp or it's juice 6tbsp
11. Tomato 1 medium sliced
12. Salt 2tsp
13. Red chili flakes 1tsp (optional)
14. Basmati rice 2cups soaked
15. Water 3-1/2cups total broth and water
16. Raisins 2tbsp

Method:
1. In a cooking pan add mutton and add all above spices and water, cook on high flame for 5-7 minutes and then on low flame for about 45-50 minutes or until meat gets tender.
2. In another cooking pan add oil and add whole spices mentioned above and stir for a while, then add sliced onion and cook until light golden.
3. Now add ginger garlic paste and cook for a minute, then add sliced tomato and cook until tomato gets tender.
4. Now add cooked mutton and give it a good mix, add salt 2tsp according to your quantity of rice.
5. Red chili flakes is optional add if you like, add broth, if broth is less then add water at least 3-1/2cups will be perfect quantity for 2cups of rice.
6. When it starts to boil add soaked rice in broth and cook until water dries up completely avoid using too much of cooking spoon.
7. Simmer for 10 minutes at least before simmer add raisins and then simmer.
DELICIOUS PUNJABI MUTTON PULAO is ready.
