These Lemon Blueberry Protein Muffins crafted by the talented Halle have us feeling some type of way 🍋 Follow along to create your own:
Ingredients:
-1-2 scoops of Gainful Personalized Protein
-1 Madagascar Vanilla Flavor Boost
-1 1/2 cup all-purpose flour
-1 tbsp baking powder
-2 tsp lemon zest
-1/4 cup applesauce
-1/3 cup maple syrup
-1/3 cup coconut oil, melted
-1/2 lemon, juiced
-1 1/4 cup plant-based milk
-1 cup fresh or frozen blueberries
Directions:
-Preheat the oven to 350 degrees and lightly grease a muffin pan.
-In a bowl combine Gainful Protein, Vanilla Flavor Boost, flour, baking powder, and lemon zest.
-In a different bowl, combine apple sauce, maple syrup, melted coconut oil, lemon juice, and milk.
-Add the wet ingredients into the bowl with the dry ingredients and mix until smooth, then lightly fold in the blueberries.
-Fill the muffin pan with blueberries batter and pop in the oven for 25-30 minutes.
-Cool for 10 minutes and enjoy!
