Easy sheet pan dinner!
Italian Sausage, Peppers, and Potatoes
2 Italian sausage links, sliced into rounds
1 red bell pepper, seeded and chopped
1 half an onion, peeled and chopped
1.5 lb gemstone potatoes, quartered
2 tbsp olive oil
Creole Seasoning to taste, about 1 tsp
Cilantro, optional
Mix all chopped vegetable on a baking sheet with olive oil and creole seasoning. Top with sliced Italian sausage. Bake at 425 degrees for 25 minutes. Garnish with cilantro.
Note: This was way too much food, but we had plenty leftover for lunch. :)
