Dalia khichdi is a nutritious and comforting dish made from cracked wheat (dalia) and lentils, often flavored with spices and vegetables. It’s a popular choice for a light, wholesome meal and is known for its easy digestibility, making it ideal for all ages. Here’s a basic recipe to make Dalia Khichdi:

Ingredients
1 tbsp vegetable oil
1/4 tsp asafetida
1 tsp cumin seeds
1/2 cup chopped beans
1 medium size chopped carrot
1/4 tsp turmeric powder
1 large size chopped tomato
Salt to taste
1/6 cup toor dal
3/4 cup porridge (Dalia)
3.5 cups water
Fresh Coriander leaves for garnishing
Instructions:
1. Rinse the cracked wheat and lentils in water a few times. Drain and set aside.
2. Heat ghee or oil in a large pot or pressure cooker over medium heat.
3. Add asafetida & cumin seeds and let them splutter.
4. Add finely chopped garlic and green chili and saute on low flame until raw taste goes away.
5. Add chopped beans and carrots, and turmeric powder, and mix well on high flame.
6. Add chopped tomatoes and salt to taste, saute on high flame for 1 minute.
7. Cook until tomatoes are soft on low flame.
8. Add the rinsed cracked wheat and lentils to the pot. Stir on medium flame to combine with the spices and vegetables.
9. Cover and cook for 5 minutes on low flame.
10. Pour in the water and bring to a boil on a high flame.
11. Give a whistle on a high flame and 3 whistles on a low flame.
12. Allow the steam to release from the pressure cooker on its own.
Garnish and Serve
Once cooked, check the consistency. You can add more water if you prefer a thinner consistency.
Garnish with fresh coriander leaves.
Serve hot, optionally with a side of yogurt or pickle.
