Are you looking for every day or weekend breakfast bread rolls that are easy, fluffy, and not sour? Well, look no further! 😊 Here is my second version for Sourdough Pandesal that you can make overnight with minimal effort. 👍😃

For 9 servings of No sour sourdough pandesal, you will need:
105 grams sweet starter
235 grams bread flour
40 grams sugar
1/2 tsp fine sea salt
80 grams milk or water, room temperature
1 large whole egg (57 grams), from the fridge
20 grams butter, melted and cooled to room temperature
Procedure (video):
Prepare the sweet levain for 6 to 8 hours before making the dough.
In the bowl of a stand mixer, add all the ingredients except butter and mix for 3 minutes, using the paddle attachment.
Add the melted butter gradually and knead the dough using the dough hook for 8 minutes or until the dough passes the gluten stretch test. Then cover the dough and rest for 15 minutes.
Divide the dough into 6 or 9 equal portions. Once divided, shape each dough into round neat balls. Then placed them with the closure downwards, with a sufficient distance between them in a baking dish pan (greased). My baking pan size is 25x21cm or 10×8 inches.
Cover and let the dough proof for about 8 to 10 hours at room temperature (24C/75F). Depending on your kitchen temperature and season, the proofing could take anywhere between 6 to 16 hours.
The next day, preheat the oven (up and down heat) to 190C/374F.
Drizzle the top of the dough with bread crumbs or brush them with egg wash or top with some seeds.
Bake in the middle rack for 18 to 20 minutes. If your bread rolls are browning too fast, cover them loosely with aluminum foil. Once baked, the internal temperature should be around 93C/200F.
Immediately transfer the baked bread rolls to a cooling rack.
