INGREDIENTS:
Pasta Chips:
150 g (5 oz) Penne Pasta
50 g (1/2 cup) Parmigiano Reggiano (or Parmesan Cheese), finely grated
Salt
Pepper
Vegetable oil for deep frying
Cheese Sauce:
15 g (1 tbsp) unsalted butter
5 g (1/2 tbsp) all purpose flour
120 ml (1/2 cup) milk, room temperature
3/4 tsp sweet paprika
1/4 tsp salt
1/2 tsp sugar
70 g (2,5 oz) Cheddar cheese, shredded or finely chopped
DIRECTIONS:
Pasta Chips:
1. Bring to a boil a large pot of water and salt generously.
2. Cook Pasta in salted boiling water until it's overcooked, not "al dente": about 5 minutes more than the minutes written on the pasta packaging.
3. Well drain pasta and rinse with cold water to remove the excess of starch and cool down fast.
4. Place pasta onto a lined and greased tray, every Penne well separed.
5. Meanwhile heat the frying oil until very hot (180°C-350°F): to check if it's done if you don't have a thermometer, soak the handle of a wooden spoon, if it's bubbles a lot, the oil it's ready.
6. Fry few Penne at a time to avoid they stick together. They need to fry about 2 minutes if your oil is very hot. They won't turn out golden, but incredibly crispy!
7. Drain Penne over kitchen paper; if they sticked together, it will be very easy to separate them after about 3-4 minutes.
8. Coat Penne when still warm with some finely grated Parmigiano Reggiano cheese (or Parmesan Cheese).
9. Season with salt, pepper and serve immediately.
Cheese Sauce:
1. In a medium size non-stick pan, melt butter.
2. Add flour, paprika and mix well and cook for about 2 minutes over low-medium heat.
3. Add gradually milk and keep on stirring until well combined.
4. Cook for about 2 minutes until the milk is very warm (but not boiling) and add finely chopped Cheddar cheese.
5. Cook over low-medium heat until the cheese is completely melted, keep on stirring.
6. Add sugar, salt and cook over for about 1-2 minutes until thicken but not too much, or it will turn out too thick when cool down.
7. Pour the sauce into a heat proof bowl and serve.
You can prepare the sauce before and keep it in refrigerator for up to 4-5 days. Warm in the microwave for few seconds when you remove it from the fridge.
