I tried this cake for the first time at New Year's Eve and was blown away. The cake is made with 100% semolina, no flour and special ingredients like cashews, pumpkin preserve, rose water, cardamom, cinnamon, nutmeg, lime zest and vanilla. You can tell why this is really special!

Here are the ingredients and steps to make this recipe!
Sri Lankan Love Cake
200 gms Semolina
125 gms room temp unsalted Butter
2 Egg Whites
6 Egg yolks with
250 gms Sugar
1 tbsp Honey
200 gms broken Cashew nuts
1/2 tsp Cinnamon powder
1 tsp Vanilla essence
1 tsp Rose Water
1/4 tsp Cardamom essence
100 gms Pumpkin preserve
1/4 tsp grated Nutmeg
1/4 tsp grated Lime zest
Heat the semolina till it is warm and fragrant and then take off the heat for a few minutes
Add the butter and mix
In a separate bowl, whisk the egg whites till stiff and leave aside
In another bowl, cream the egg yolks and sugar till creamy
Fold in the semolina & butter mixture and fold
Add the honey, cashew nuts, cinnamon powder, vanilla & cardamom essence and rose water
Add the pumpkin preserve, grated nutmeg and lime zest
Fold everything together
Fold in the stiff egg whites
Scrape into a prepared pan and bake for 1 hr at 350 F
Halfway through cover with foil and continue baking
