So this is what the steak should look like after it's rested for a while. See how the juices have rendered out? Let's go ahead and slice it. I'm gonna follow along the line of the bone and then slice the whole thing up. This is my favorite way to do a porterhouse steak. As you can see, we've achieved a perfect medium rare—very juicy and tender.
