The variety of kimchi fried rice is endless. If you have over ripped kimchi in your fridge, just stir fry kimchi is softly with bacon. You’ll be amazed by how good it tastes!

Ingredients
2 cups chopped over ripped kimchi (kimchi that was in the refrigerator for about 10 to 20 days)
2 cups cooked rice, preferably day-old
220g (about 1/2 pound) bacon
2 to 3 stalks scallion, for garnish
1/2 stalk green onion, to stir fry and flavor the dish
1 tablespoon soy sauce
1 teaspoon Korean chili flakes(Gochugaru), optional
1 tablespoon sesame oil
1 teaspoon vegetable oil
Salt to taste
Instructions.
1. Thinly slice the scallion. Chop white part of green onion.
2. Cut the bacon into small pieces (small dice)
3. Heat the pan over medium heat and add vegetable oil. Add the bacon to the pan and stir-fry until crispy, and then add green onion to the pan. Add soy sauce, and chopped kimchi to the pan. Stir fry the ingredients in a medium-low heat for about 4 to 5 minutes. Add the rice to the pan. Mix it with all the ingredients until there’s no lumps,
4. Add Korean chili flakes. Cook it in a medium-low for additional 3 to 4 minutes. Add sesame oil, and scallion. Turn off the heat.
