Hello folks! And a very warm welcome back to What’s For Tea :) for tea tonight I made this lovely chicken & sweetcorn soup…this recipe is very similar to that of our local Chinese takeaway :) and tastes almost identical!

Give it a go, and let me know what you think.

Makes enough for 4-5 people

ShoppingList:

* 1 Tablespoon vegetable oil - for frying
* 2 Garlic cloves, crushed
* 2cm Piece of ginger, peeled and finely chopped
* 4 Spring onions, sliced
* 350g Can (12 oz) sweetcorn
* 1.2 Litres (42 floz) chicken stock
* 1 Tablespoon soy sauce
* 1/2 Tablespoon sesame oil
* 2 Cooked chicken breast fillets - sliced or shredded
* 2 Egg whites
* Handful of fresh coriander - chopped
*. Optional - 1 teaspoon of cornflour & water to thicken.
