The best ice cream ever, seriously!
240g (1 cup) half and half
150g ( ¾ cup) sugar
460g (2 cups) heavy cream
Splash of vanilla extract
75g (⅔ cup) malted milk powder
6 egg yolks
In a bowl, mix together cream, malt powder and a splash of vanilla extract. Try to whisk out all of the lumps but it will be strained later so you don’t need to go nuts. Pour half and half in a pot, place on the stove over medium high heat. While the half and half is warming up, stir together the egg yolks and sugar. Once the half and half is very warm, but not boiling, temper it into the egg and sugar mixture. Once its all together pour the mixture back into the pan, and put it on the stove over medium high heat. While stirring continuously, bring the mixture to 82C (180F). As soon as it hits 82C(180F), take it off the stove and pour into the malt and cream. Stir. Strain through a fine mesh strainer. Refrigerate until completely cool, preferably overnight. Once cool, pour into your ice cream machine and follow the manufacturer's instructions. Enjoy!
