100 days of healthy desserts - day 86: 4-ingredient Healthy Chocolate Chip Cookies (vegan & gluten-free)😍

Ingredients:
1 cup apple puree (240 ml) or two mashed bananas
1/2 cup unsweetened peanut butter (120 ml) (I use a smooth pb that is 100 % made of peanuts)
1 cup gluten-free oats (240 ml)
optional: 1 teaspoon cinnamon
1/4 cup 80% dark chocolate chunks (60 ml / 40 g)

1.Mix the apple puree, peanut butter and oats together
2. Scoop the cookies on a baking pan lined with parchment paper. Add the chocolate chunks on top
3. Bake at 180 Celsius degrees (350 in Fahrenheit) for 10-12 minutes

*Apples are high-fodmap, so if you are on the elimination phase of the low-FODMAP diet or apples are your trigger, you can replace the apple puree with 2 mashed bananas!☺️
