Pork Adobo sa atsuete / annatto powder is an Ilonggo version of adobo wherein ginger and atsuete are added to the usual ingredients of the classic adobo that gives a distinct flavor and aroma.
Ingredients:
500g pork belly, cubed
4 cloves garlic, minced
1 small onion, minced
1 thumb ginger, diced
1 tsp annatto powder
1/2 cup vinegar
2 tbsp soy sauce
2 bay leaves
1 tbsp oyster sauce
salt and pepper to taste
