When I first started, I didn't have a stitching pony. I couldn't figure out why my saddle stitch looked like garbage until it was pointed out to me that using a stitching pony helps your hand stitching stay consistent.
I consider a stitching pony an essential leather working tool. You are doing yourself a disservice if you are a beginner leather worker and not buying a stitching pony early on. I know it's expensive to get started in leather craft, though, so these two cheap options should help you out.
