Stuffed Acorn Squash
• 2-3 tablespoons olive oil in pan
• 1 small onion – chopped
• 1 tsp salt
• ½ tsp pepper
• 1 Tbsp oregano
• 2 cloves minced garlic – cook in onions for about 20 secs
• 1 lb ground beef
• Turn heat off – drain meat if needed
• Crumble up 1 ½ - 2 sleeves of crackers of choice – we used saltine crackers
• 1/3 cup chicken broth
• Slice and deseed acorn squash
• Fill squash
• Drizzle 2-3 Tbsp on chicken broth on each half to add extra moister to the stuffing
• Bake on baking sheet at 400 for 40-45 minutes or until squash are soft
