Pumpkin & Pandan rolled crepe with sweet coconut
Ingredient:
Pumpkin crepe:
100g steamed pumpkin
180g Flour
2/3 tsp salt
1& 1/2 nos eggs
150ml coconut milk
210ml water
1 tsp oil
Pandan crepe:
180g Flour
210ml pandan juice (From: Blended 6 pc pandan leaves with 210ml water)
2/3tsp salt
1 1/2 noss eggs
150ml coconut milk
Sweet coconut filling:
70ml water
200g palm sugar
2 pandan leaves
500g Grated coconut
2/3 tsp salt
2 & 1/2 tsp corn flour + 2 &1/2 tbsp water
