BC Dungeness Crab 1 pc (live, minimum 1 kg)
Ginger 10 slices
Green Onion 3 stalks (cut into sections, tear some thin green strips)
Minced shallot 2 tbsp
Cooking wine 10g
Chicken powder 1/2 tsp
Sugar 1/2 tsp
Salt 1/4 tsp
White pepper 1/4 tsp
Water 2 tbsp
Cornstarch 2 tbsp (for pan frying)
Cornstarch 1/2 tsp
Water 1 tbsp
Wash and cut crab into large pieces following instructions in video.
Coat the exposed meaty part of each piece of crab with cornstarch.
Heat pan. Add 2 tbsp oil. Pan fry each side of crab pieces from 1 min at medium high heat.
Turn heat down to medium. Add ginger slices, shallots & green onions. Stir fry for about 1 min. Add wine. Mix seasonings with water. Add to crab and stir fry for about 2 min. Mix cornstarch with water then add to crab pieces. Turn to high heat. Stir fry briefly and add thin green onion strips. Serve.

在每塊螃蟹的肉部分塗上粟粉。
熱鍋。 加2湯匙油。 在中高火下,煎蟹件每面1分鐘。
調低至中火。 加入薑片,蔥和蔥頭。 炒約1分鐘。 贊酒。調味料與水混合,加入蟹件中,翻炒約2分鐘。 粟粉與水混合,加入件中。 轉高火。 短暫炒勻,然加入蔥絲。 完成。
