Nothing says Christmas better than hot cocoa with mini marshmallows. So here's an easy recipe to make your own! Comes together really easily and this method is so much easier than cutting one big block of marshmallow into mini ones.
What you'll need for 1/2 cup marshmallows:
Gelatin 1/2 tsp
Water 35g
Liquid glucose 40g
Sugar 90g
Vanilla 1/2 tsp
a pinch of Salt
1. Mix half the water with the gelatin and let it bloom
2. Place sugar, glucose, and water in a saucepan and boil until "soft ball" stage (235°C)
3. Pipe onto a surface dusted with cornflour and icing sugar (50:50)
4. Air dry for 2 hours min. Cut them up and toss in more icing sugar.
5. Store in an airtight container.
