Pickle Soup Recipe:
Ingredients:
3-4 slices thick cut bacon chopped
3 carrots chopped
3 celery sticks chopped
1 yellow onion chopped
2 tablespoons butter
3 tablespoons all purpose flour
4-5 cups chicken broth
3 yellow potatoes peeled and chopped
1 cup dill pickled chopped ( I used and recommend bubbies kosher dill pickles)
1/3 cup pickle brine (pickle juice from container)
4 tablespoons fresh dill finely chopped
1 cup grated havarti cheese
1 cup heavy cream
Salt & pepper to taste
Directions:
Cook bacon until crispy, remove from pot and reserve.
In remaining bacon grease cook carrots, onion, and celery until soft.
Add in butter and flour and cook for a minute or two in order to cook out flour taste.
Slowly add in chicken broth while continuously stirring about 1 cup at a time.
Add potatoes, pickles, pickle juice, and fresh dill. Cook until potatoes are soft.
Add in havarti cheese a little at a time and stir to combine.
Add 1 cup of heavy cream and salt and pepper to taste. Add in reserved bacon bits.
Serve right away and garnish with sour cream and fresh dill
