Aubergine Chutney
300g quartered aubergine
1 med onion chopped
1 med tomato chopped
1 tsp ginger and garlic paste
2 sliced green chillies
half tsp mustard seeds
half tsp cumin seeds
1 tsp coriander and cumin powder
1 tsp Kashmiri chilli powder
1 tsp red curry powder
half tsp turmeric
Salt to taste
2 tsp oil
Method
Heat oil. Add mustard and cumin seeds. Let is pop. Add in aubergine, onions, tomatoes, ginger garlic paste and spices. Mix well. Add in green chillies and salt. Cover and let it cook for 12 minutes.
Remove from heat and serve hot as a side dish.
