It has become a fun family tradition of ours to make this recipe because you don't feel icky after eating it since it's not loaded with all of the sugar and gluten. Frankly, you won't even miss it because the flavor is so real and fresh and the texture of the cookie is perfect. The cookie has a lovely texture where it's hard just like you would expect a gingerbread cookie to be, but it's not break-your-tooth hard. It has a very lovely chew and the perfect essence of the fresh ginger. It has just the right amount of sweetness as well as a slighlty salty bite to balance out the sweetness. It's one of our favorites.
