Ingredients & process:
1. Sooji (semolina): 1 and 1/2 cup
2. Ghee 2 tsp
Take the ghee in a karai, heat it and add the semolina and fry it with low flame. No high flame please. Ghee will increase the taste of sooji. After frying 2 to 3 minutes, take it on a plate. Now take the below ingredients in the same karai:
3. Refined oil 3 tsp on low to medium flame
4. Now fry the peanuts for 2 to 3 minutes with low to medium. Keep them aside. Now add few cashews in the same oil, fry them with low flame for 1 minutes, keep them aside now add some almonds and fry with low flame for 1 minutes.
Now add in the same oil:
5. Black mustard seed : 1 tsp
6. Cumin seed : 1 tsp
7. Urad dal(black lentil) : 1 tsp(not soaked)
8. Curry leaves : 15 to 20 nos
Fry them 1 minutes with low flame.
Now add:
9. Chopped green chilli: : 4 nos, fry it for another 1 minute.
Now add:
10. Chopped ginger :1 tsp and fry it for 1/2 minute
with low flame.
Now add:
11. Chopped carrot :1 nos, fry it for 2-3 minutes with low flame.
Now add
12. Chopped Onion : 2 nos
13. Salt :According to taste
14. Sugar 1 tsp
*** Add 10-15 curry leaves for more aroma at this time.
Now add the sooji and fry them with the vegetables with low flame. Now add 2 cup hot water, mix them well, add fried peanuts, cashew and almonds , let it boil for 2 to 3 minutes with low flame. stir more to make the sooji dry.
