The key to a tender, juicy and flavorful chicken breast is to soak it in a salt water brine first. On today;s show, I share the perfect ingredients/mix for a brine and then we will BBQ some chicken breasts and yes, they are amazing!! Hope you enjoy this episode and that you give this recipe a try.

Brined – BBQ Chicken Breast
Ingredients
For the Brine:
• 1 ½ liters of water (1.6 quarts)
• 50 grams fine table salt (3 TBSP)
• 25 grams fine white sugar (1 ½ TBSP)
For the Chicken
• 2 boneless chicken breasts (up to 6 chicken breasts)
• Extra virgin olive oil (EVOO) – enough to lightly coat each breast
• 1 TBSP Worcestershire sauce per breast
• Paprika – enough to lightly sprinkle on each breast
• Any BBQ sauce – enough to lightly coat each breast (this is optional but preferred)
Process
• In a bowl, add the water, salt and sugar and stir until all dissolved
• Pound each chicken breast to about 13 mm (1/2 inch) thick and place in brine. Put in the refrigerator for min 1 hour, up to 2 hours
• Remove form brine and pat dry with paper towels
• Brush EVOO on each side of each breast, then add 1 TBSP of Worcestershire sauce to each breast and lightly sprinkle paprika on each breast as well. Let stand 15 minutes up to 1 hour
• Pre-heat grill to high, place chicken on grill and cook 3 minutes, then flip and continue this 3 minute/flip process until breasts are cooked (internal temp of chicken should be 165 deg. F at thickest part)
• Brush BBQ sauce on each side of chicken breast – remove from grill and serve
