Enjoy the famous "cacio e pepe" cooked in a pig's bladder. This iconic pasta dish is a signature dish at Ristorante Lido 84. Rigatoni pasta, pecorino cheese, pepper, and olive oil are placed inside the inflated bladder and cooked in a pot of boiling water. The result is an extremely al dente pasta with a hint of pork flavor. Lido 84 entered the World’s 50 Best list at no. 78 and also won the “One to Watch” award in 2019.
