Apple Cookies (Turkish Style) ( For 20-24 cookies )
Ingredients:
For the Filling:
4 apples
1/3 cup sugar
1/3 cup walnuts (crushed)
1 tsp cinnamon
For the Dough:
500g All-purpose flour
100ml vegetable oil
250g margarine (melted and cooled down to room temperature)
3 tbsp Confectioners sugar
2 tbsp Greek yogurt
10g baking powder
Plus, additional Confectioners sugar for dusting on top of the cookies once baked.
Preparation:
In a pan, add the grated apples and sugar; cook over low heat for about 3-4 minutes. The sugar will melt, and the apples will release some juices. Cook until the apples are softened, and there isn't too much liquid; then, turn off the heat. Add the cinnamon and walnuts, mix well, and set aside to cool to room temperature.
Mix all the ingredients for the dough in a large bowl, initially using a spatula, then knead by hand until it forms a dough ball. Divide the dough in half.
Take one dough ball, place it between two parchment papers, and roll it to about 2mm thick, creating a 24 cm diameter circle. Remove the top parchment paper and, using a plate, cut around the edges.Remove the excess - you can reuse it to roll out more cookies!
Cut the dough into equal triangles and fill with the prepared apple mixture. Roll the triangles from the wide edge towards the tip.
Line the cookies on a baking sheet and bake at 180C for 20-25 minutes. Once baked, allow them to cool on a cookie rack for a few minutes and dust with confectioners sugar. Enjoy!
