This may become your go-to technique for making BBQ chicken in your Instant Pot any night of the week – you don’t have to wait for a Summer holiday weekend to make this for your family. And there are only 5 ingredients! Use any combination of seasoning, cooking liquid, and sauce that you prefer. If you don’t want to cook with alcohol, other great options are apple juice, pickle juice, chicken broth, or just plain water.

I used leg quarters in this video since they were on sale and usually the best priced of all the cuts, but you can translate this recipe to other cuts and even a whole chicken.

Cooking Times (all thawed):
Leg Quarters: 15 minutes + 10 minute NPR
Bone-In Thighs and/or Legs: 10 minutes + 10 minute NPR
Bone-In Breasts: 12 minutes + 10 minute NPR
Wings: 10 minutes + 10 minute NPR
Whole Chicken: 6 minutes/lb + full NPR ***Use the IP Trivet with handles for a whole chicken***
Tip: Don’t overpack the meat pieces. There needs to be some space for the steam to work its way around each piece.

Today’s Ingredients:
4 chicken leg quarters (5¼ lbs in the video)
3 TB liquid smoke (Colgin’s Hickory in the video)
3 TB BBQ seasoning (McCormick’s GrillMates in the video)
12 oz beer (Pabst Blue Ribbon in the video)
BBQ sauce (Sweet Baby Ray’s Original in the video)

Instructions:
1. Rub the chicken all over with a mixture of liquid smoke and bbq seasoning. Make sure to get in between the skin and meat, too. Let the chicken sit and marinate at room temperature for about 30 minutes before cooking.
2. Pour the beer into the Instant Pot insert. Place a trivet or steamer basket into the pot.
3. Arrange the chicken into the pot allowing some gaps in between for the steam to work itself around each piece.
4. Lock the lid and cook on manual/high for 15 minutes followed by a 10 minutes natural pressure release. Release any remaining pressure and open the lid.
5. Place the chicken skin-side down on a parchment-lined baking sheet. Brush bbq sauce on the chicken. Place under an oven broiler 5-10 minutes, flip, repeat with bbq sauce and broiling with the skin-side up. You can do this on a grill if you prefer, but I think it’s more convenient using the oven. Watch closely to pull it out if the bbq sauce starts to burn.
