Kerala Cheera Thoran is a South Indian Stir-fry recipe using the bright and vibrant leaves of the Red Spinach. This variety of Spinach like others leafy greens are high in valuable nutrients and provides various benefits to ones health such as high in vitamin C and E levels, contains antioxidants, minerals, and phytochemicals. This recipe is easy and quick to prepare in under 10 minutes and is served a side dish to go along with steamed rice or roti.
Ingredients: Serves 4 to 5
2- medium size bunches of Red Spinach/Cheera
2- Garlic cloves
4 to 5-hot green chilies
15- red shallots
1 teaspoon- Cumin seeds
1/2 teaspoon- Turmeric powder
1 cup to 1 and 1/2 cups- grated coconut
1 teaspoon- Salt, as per taste
2 tablespoons- Coconut oil
1 teaspoon- Whole Mustard seeds
a few- curry leaves(available at Indian grocery stores)
2 to 3- dried red chilies
1/2 teaspoon- Salt, as per taste
