This cookie is the perfect way to enjoy a cup of coffee or tea. Save it and try it soon. It’s so aromatic crunchy on the outside soft on the inside. You’re gonna love it guaranteed.
You will need:
1 1/2 cups all purpose flour/ 210 g plus more for the work surface
1/2 tsp baking powder
1/4 tsp baking soda
1 egg/ 60 g
85 g soft unsalted butter
1/2 cup powdered sugar
1 tbsp aromatic spices:
1 tbsp anise seeds
1/4 tsp mastic gum pearls
1/4 tsp Mahlab seeds or powder
1 star anise
* grind all these spices and use only 1 tbsp for this cookie
1 tbsp anise seeds
1 tbsp instant powdered milk
* you will also need 1/4 cup toasted pecan halves or walnuts
220 g date paste/ you can find all these ingredients easily at any specialty or middle eastern grocery store.
1/2 tsp cinnamon
1/8 tsp nutmeg
1 1/2 tbsp olive oil
Preparation:
Start by grinding the aromatic spices and set aside.
Prep the date paste by adding the cinnamon, nutmeg and olive oil. Mix and shape into logs or strips.
Make sure the butter is room temperature, add to a clean bowl with the powdered sugar and mix with a rubber spatula. Add the egg and switch to a whisk then add the spice mix, anise seeds and powdered milk. Whisk well then add the baking powder, baking soda and the flour. Add the last 1/2 cup of flour gradually. You want the dough to be easy to mold and work with. Start shaping the dough into thin logs stuffing with the dates and nut just like shown. I filled some with dates and nuts, others with dates only and others with nothing at all. These are the tiny circles.
Bake at 350 degrees F for 15-20 minutes and enjoy.
