Ingredients:
2 1-inch thick sushi-grade tuna steaks
Kosher salt & freshly ground black pepper to taste
2 tbsp (18g) white sesame seeds + additional if necessary
2 tbsp (18g) black sesame seeds + additional if necessary
2 tbsp (30mL) olive oil + additional for coating tuna
1 tsp (5mL) sesame oil
1 avocado, thinly sliced
Handful (50g) of cilantro
3 tbsp (45mL) soy sauce
Method:
Place tuna steaks on a cutting board or clean flat surface. Mix the white and black sesame seeds in a small bowl. Brush the tuna steaks with olive oil to allow seasonings to stick.
Sprinkle each side with salt and pepper and the combined sesame seeds on all the sides. Pat seasoning into each side of the tuna’s flesh to make sure the seasoning sticks.
Take a large cast iron skillet and add the two tablespoons of olive oil and one teaspoon of sesame oil. Bring to medium-high heat (375°F (190°C)). When the oil begins to smoke, place tuna steaks in skillet. Cook for 30-45 seconds per side. This will leave a red center.
Remove the tuna from heat and let rest for 5 minutes. Cut into 1⁄2” thick slices and add additional sesame seeds for aesthetics.
Serve with soy sauce, a handful of cilantro, and thinly sliced avocado.
