Buenos Dias a todo!
Today's video is all about the Cuban dish, Ropa Vieja, which translates to Old Clothes, which is represented by the colorful strips of peppers and onion and shreds of beef. The beef falls apart after hours of cooking so it's important to get the flank steak or skirt steak cut which has long shreddy fibers.
Food is inherently political, and every dish I make I try to get the most authentic version of, as a sign of respect to its origins. Therefore it would be inappropriate for me not to mention it.
Right now, Cuba is going through a crisis due to the authoritarian communist dictatorship starving and silencing it's people. It's not fair that we get to eat their national dish and they don't so I have added info below to help and to spread awareness. #SOSCuba

Ingredients:
1.5 pound flank steak or skirt steak
1 large white onion
1 red pepper
1 green pepper
1 yellow pepper
4 cloves garlic
1/2 cup white wine
2 bay leaves
2 tbsp cumin
2 cups beef stock
1 can or 15 ounces crushed tomato sauce
1 cup pimento stuffed olives
salt and pepper
canola oil
