Yo Team! This is a harissa paste using some of the chillies I picked up in Mexico. It's sooooooo much better than the store bought ones apart from maybe @belazu that one is V good. If you want to get hold of some dried chillies @mexgroceruk has some great products. If you're looking for a delicious and easy way to add spice to your food, then this harissa paste is for you. A trad north African harissa is made with Baklouti peppers (according to [wiki)] but didn't have those on hand but does say that they are mild and smoky so think this mix is a good alternative.
4 Guajillo Chiles
6 Arbol Chilies
1 Tbsp cumin seeds
2 tsp coriander seeds
1 tsp **caraway seeds**
4 cloves garlic, minced
1 ½ tsp smoked paprika
1 tsp sea salt
1 Tbsp white wine vinegar or apple cider vinegar
1 Tbsp tomato paste
4 tbsp / 1/4 cup olive or cold-pressed rapeseed oil
1. Remove the seeds and discard from the guajillo chillies and soak them in hot water
2. Toast cumin, coriander and caraway seeds in a pan for a few mins
3. Blend the spices and then add the softened chillies, garlic, paprika, salt, vinegar, tomato paste and oil.
4. Blend until smooth.
5. This paste goes excellent with a harissa lamb shoulder to make sure to check out that recipe will be released soon!
