A quick and easy tutorial to make your own stash of home made Carolina Reaper Hot Sauce. Carolina Reaper peppers are the hottest in the world, proudly sat at the top of the heat scale at 1.5 million Scoville units. Despite all the heat this pepper is packed with flavour, with a fruity delicious taste.

Ingredients:

2 x Bell Peppers
1-2 x Onions (down to your personal preference)
9 x Medium Mixed Chillis
15 x Cloves Of Garlic
2 x Juicy Lemons
2 x Tbsp Oregano
2 x Tbsp Vinegar
2 x Tsp Brown Sugar
2 x Tsp Salt
2 x Tsp Black Pepper
1-4 x Carolina Reapers (down to your personal preference, this video used 4)

*BONUS INGREDIENT* I forgot to mention, Rosemary works pretty well in there too.

Method:

Peel the onions and the garlic.
Chop the bell peppers and remove the pulp (leave insides in of all the other chillis).
Throw everything in the blender.
Keep taste testing as you go - remember you can add but you can't take away!
Put in a pot and cook with lid on for 20 minutes.
Stir it occasionally.
Remove from heat, wash up, sit down, and enjoy that spicy goodness!
