Maavadu or Vadu manga is an authentic pickle recipe from South India. It is an easy-peasy recipe prepared with tender/baby mangoes, which does not require any cooking and can be stored for more than a year.

Maavadu/Vadu manga or baby mango pickle recipe;
Step 1 - wash and wipe all the baby mangoes (1 kg.) and rub them with a little bit of castor oil or any vegetable oil.
Step 2 - Place all the oil coated baby mangoes in a glass jar or bharni.
Step 3 - Powder about 1/3 rd cup of rock salt, 2 tbsp of mustard seeds, 1 tbsp fenugreek seeds, 1/4th cup of red chilly powder and 1 tbsp of turmeric powder in a mixie.
Step 4 - Add the powdered spice mix over the baby mangoes and close the jar.
Step 5 - Shake the jar a couple of times in a day. The mangoes will release water and shrink.
Enjoy the pickle with millet-rice or with any other Indian meal.
Notes;
Use fresh baby mangoes which are hard to touch.
Use rock salt for better preservation of pickle.
