Ingredients...
For the Yakhni (Broth)
•1 kg beef (with bones)
8 cups water
•2 onions, roughly chopped
•1 garlic bulb, halved
•1-inch piece ginger, roughly chopped
6-8 cloves
•6-8 black peppercorns
•2-3 bay leaves
• 2-3 black cardamom pods
•1 cinnamon stick
Salt to taste
For the Pulao
•3 cups basmati rice, soaked for 30
minutes
•3-4 tablespoons oil or ghee
• 2 large onions, thinly sliced
•1 tablespoon ginger-garlic paste
• 2-3 green chilies, slit
• 1 cup plain yogurt, beaten
•1 teaspoon cumin seeds
•1 teaspoon coriander powder
•1 teaspoon garam masala
• Salt to taste
Fresh coriander and mint leaves,
chopped (for garnish)
Fried onions (optional, for garnish)
Instructions...
Preparing the Yakhni
1. In a large pot, add the beef, water,
onions, garlic, ginger, cloves, black
pepperCorns, bay leaves, black
cardamom, cinnamon stick, and salt.
2. Bring to a boil, then reduce the heat
and simmer for about 1.5-2 hours or
until the beef is tender and the broth
is flavorful.
3. Strain the broth and set aside.
Separate the meat from the bones
and set aside.
Preparing the Pulao...
1. Heat oil or ghee in a large pot. Add
the sliced onions and fry until golden
brown.
2. Add the ginger-garlic paste and slit
green chilies. Cook for a couple of
minutes until fragrant.
3. Add the beaten yogurt, cumin seeds,
coriander powder, garam masala,
and salt. Cook until the oil separates
from the masala.
4. Add the cooked beef pieces and mix
well.
5. Drain the soaked rice and add it to
the pot. Gently mix with the beef and
masala.
6. Pour the strained yakhni (broth) over
the rice and meat mixture. The broth
should be about 1.5 inches above the
rice. If needed, add water to achieve
this level.
7. Bring to a boil, then reduce the heat
to low, cover the pot with a
tight-fitting lid, and cook for about
20-25 minutes or until the rice is fully
cooked and the liquid is absorbed.
8. Turn off the heat and let the pulao
rest for 10 minutes before fluffing it
with a fork.
Serving
Garnish with chopped fresh coriander,
mint leaves, and fried onions.
