After the holidays I have that slow sluggish and bloated feeling. I try to enjoy family, friends and socializing, but my gut health takes a beating.
My go to healthy detox is cabbage soup. This version is completely vegan, loaded with veg and no salt or oil added. I add ginger for extra anti inflammatory properties to get my gut, liver and joints back on track.
Ingredients:
cabbage
carrots
celery
onion
garlic
ginger
okra
corn (unsalted)
diced stewed tomatoes (unsalted)
tomato purée (unsalted)
no salt seasoning
herb de provence
3 cups water
Wash and chop up all veg. Dump all ingredients into a large pot. You can use a crock pot as well. Cover and cook on medium heat until cabbage and other vegetables are at desired tenderness 45-60 minutes. Feel free to add or eliminate any of the veg except cabbage. Enjoy!
