Easy Tasty Tomato Chutney Recipe ( Fiji Style)
Ingredients:
2 Cans Diced Tomatoes (or 8 tomatoes)
Oil for cooking
Salt to taste
2 tsp sugar
1 medium onion chopped
1/4 tsp turmeric
1 sprig of curry leaves
2 small chili chopped (green or red)
1/2 tsp cumin seed
1/2 tsp mustard seed
2 tsp grated garlic
Method:
1) Put a pan on medium heat and heat 3 tablespoons of oil. When the oil gets hot, add cumin and mustard seeds , give a mix and cook it for 30 seconds.
2) After 30 seconds, add chopped onions , curry leaves, chilies and garlic, give a mix and cook it for 3 minutes or until the onions get a light brown colour.
3) Add diced tomatoes, salt, sugar and turmeric, give it a mix , put a lid on and cook it for 10 minutes .
4) After 10 minutes, give it a mix . Use the back of a spoon to break up any lumps and taste your salt. Put the lid back on and cook it for a further 10 minutes.
5) Give it another mix, turn the heat off and garnish it with fresh or frozen coriander leaves.
6) Enjoy it with roti, rice, poori or upma.
