I made these delicious one-bowl cookies on the spur of the moment. They are lightning-fast to make! Feel free to add the zest of one lemon to the cookie dough. Ingredients listed below (along with directions for making your own self-rising flour).
Emergency Southern Tea Cakes
Ingredients for about 2 dozen "cakes"
2 sticks (1 cup/226g) salted butter
1 1/2 cups (300g) regular granulated sugar
1 large egg, beaten
1 teaspoon pure vanilla extract
2 1/2 cups (300g) self-rising flour*
Bake 350°F until edge of cookies color slightly -- about 15 minutes
*To make your own self-rising flour:
For each cup of all-purpose flour, add 1 1/2 teaspoons baking powder and 1/2 teaspoon table salt. Whisk to combine.
