This is Paranubes Caña Morada, a Mexican aguardiente de caña .
This isn’t just any bottle of Paranubes. This is a single cane varietal release. The regular Paranubes is a blend of four different cane varietals: Criolla, Dulce, Amarillo and Morada. As you’d expect with the name, this release is 100% made from Caña Morada.
Its produced by Jose Luis Carrera in the state of Oaxaca, specifically in the small village of Rio Tuerto located high up in the cloud forest of the Sierra Mazateca Mountains.
The canes are crushed and the juice is fermented in pine vats. During fermentation no water or yeast is added. A tea of mesquite bark is added to help kickstart fermentation and the rest of it is handled by the ambient yeast in the air.
Jose Luis uses a constant, rolling fermentation where new cane juice is added to already fermented liquid. This creates all sorts of esters and flavor compounds
Distillation takes place on a copper column still and then the spirit is bottled at 54.5% abv.
