It’s another beautiful day and one of the questions I get in tamale video is what is a good substitute for lard???? Well today I share with you how to make them without using any lard , now let me tell you I experienced making tamales with both shortening and oils and vegetable shortening took the win, from the feel, touch and taste😅 and the masa floating is proof of the perfect consistency ☺️ of course lard is in my opinion bette but vegetable shortening is the best substitute. ✅want the filling to be more saucy, add more broth to your salsa
✅ don’t have a instant pot ? No problem make them in stovetop, over medium low heat steam for 1 hour and 1/2
✅a stand mixer is the easiest and fastest way to way to make the perfect masa but if you don’t have one don’t worry you can still master it using a hand mixer or your hands(that’s how my mom makes them still 😅) for me, the less time I spent on it the better 😃
Ingredients: 28 pre soaked corn husks
For the chicken:
5 lbs split chicken breast with rib
1 onion
1 head of garlic
3 bay leaves
1 Anaheim pepper
10 cups of water
1 tbsp lawry’s garlic salt
Coarse salt I used 3 tbsp
For the salsa verde
1/2 lb tomatillo is used milpero
Chile Serrano **depending on how spicy you want your salsa or you can use jalapeños
(Optional) Chile árbol
1/2 onion
4 garlic cloves
Handful of cilantro
Handful of spinach
1/2 tsp ground cumin
1/2 tsp peppercorn
1/2 tsp oregano
3 all spice berries
3 whole cloves
For the masa
6 cups instant corn masa for tamales( Maseca)
1 cup of the salsa verde
6 1/2 cups chicken broth
2 1/4 cups vegetable shortening
5 tsp baking powder
Salt to taste I used 2 tsp
