ASIAN CHICKEN BOWL
Ingredients for Korean BBQ Sauce
Dark brown sugar ½ cup
Soy sauce ½ cup
Water 1/8 cup
Sambal oleak 1 tbsp heaped
Thai sweet chili sauce 2 tbsp
Rice vinegar 1 tbsp
Toasted sesame seeds 1 tsp
Black pepper ½ tsp
Grated fresh ginger 1 tsp
Grated garlic 5 cloves
Corn flour 1 tbsp
Water 1 tbsp
Oil as required
METHOD FOR SAUCE
Mix all the ingredients in a sauce pan, cook for 2 mins, and thicken with corn flour slurry to thicken the sauce.
Other Ingredients
Onion 1 sliced
Ginger minced 1 tbsp
Chopped garlic 1 tbsp
Chicken julienne ½ kg
Carrot ½ cut into julienne
Capsicum ½ cut into julienne
Red bell pepper 1 cut into julienne
Boiled jasmine rice 3 cups
METHOD
Heat oil in a pan, sauté onions, ginger and garlic, add sliced chicken, fry on high heat, add ¾ cup of prepared Korean sauce, cook for a while, lastly add vegetables, sprinkle sesame seeds and serve in a bowl.

CHAANP-E-LUCKNOWI
Ingredients
Mutton chops flattened 1 kg
Raw papaya 2 tbsp
Ginger garlic paste 1 tbsp heaped
Salt 1 ½ tsp
Red chili powder 2 tbsp
Hung curd ½ cup
All spice Powder 1 tsp
Dried fenugreek leaves grinded 1 tsp
Lemon juice 2 tbsp
Butter melted ¼ cup
Oil ¼ cup
METHOD
Marinate chops with all the given ingredients, rub well, keep for 2 hours, put the chops in a steamer, coat with remaining marinade, steam for 20-25 mins brushing with butter, serve hot with chutney & salad.

QUINOA SALAD
Ingredients
Quinoa ½ cup soaked in hot water for 30 mins
Rocket leaves 1 cup
Iceberg 1 cup
Orange segments 1 cup
Feta cheese ½ cup cut in cubes
French beans ½ cup boiled cut in 1 inch pieces
Sweet almonds ½ cup
Honey 2 tbsp
Salt ½ tsp
Black pepper ½ tsp
Orange pumpkin 1 cup cut in cubes
Ingredients for Guacamole
Avocado 1 peeled and chopped
Chopped onion ¼ cup
Jalapenos 4 sliced
Coriander chopped 3 tbsp
Lemon juice 2 tbsp
• Coarsely chopperize all the above together
METHOD FOR PUMPKIN
Peel pumpkin, cut into small cubes, drizzle pumpkin with oil, salt and pepper, roast for 20 min on 200 D.
METHOD FOR SALAD
Mix all the salad ingredients, lastly sprinkle with salt and drizzle honey.
