▼CHOCOLATE CHIP COOKIE CUPS RECIPE▼

Ingredients:
•2 sticks softened, unsalted butter
•¾ cup brown sugar
•¾ cup sugar
•1 teaspoon vanilla extract
•2 room temperature eggs
•2 ¼ cups all purpose flour
•1 teaspoon baking soda
•1 teaspoon salt
•2 cups semi sweet chocolate chips
Filling (Optional):
•8 ounces softened cream cheese
•½ stick softened, unsalted butter
•1 teaspoon vanilla extract
•2 ½ cups powdered sugar
Directions:
Cookies:
•Preheat an oven to 375 degrees.
•Spray 2 mini muffin tins with cooking spray.
•Using a stand mixer with the paddle attachment, cream on high the softened butter, brown sugar, sugar and vanilla extract for 5 minutes, or until light and fluffy.
•Add the eggs and mix on high for a minute, or until thoroughly combined.
•In a bowl, slightly stir together the all purpose flour, baking soda and salt.
•Add the dry mixture to the contents of the stand mixer and combine on high (Remember to start slow and work up to high.) until everything is fully incorporated (should be less than a minute).
•Remove the bowl from the stand mixer, add the semi sweet chocolate chips to the batter and stir by hand with a spoon.
•Scoop cookie batter into the mini muffin tins.
•Flatten each scoop of batter in the mini muffin tins (a cooking sprayed wooden spoon will work).
•Bake in a 375 degree oven for 10 minutes.
•While the cookies are still hot, make a well in the center of each (a thick dowel or mini rolling pin are good to use) to form a cookie cup.
•Allow to cool to room temperature.
•Remove the cookie cups from the mini muffin pans.
Filling (Optional):
•Using a stand mixer with the paddle attachment, cream on high the softened cream cheese and butter until fully incorporated (about 30 seconds).
•Add the vanilla extract and powdered sugar and mix on high until smooth (about a minute).
•Scoop or pipe the filling into each cookie cup.
•Serve when ready.
