The black line or 'vein' found in a prawn is actually its intestinal tract. It isn't unsafe to eat but it can give a grainy texture and ruins the prawn's wonderful flavour. Use a small sharp paring knife is to devein a prawn.
Follow this step by step guide from Great British Chefs.
1. Once the shell has been removed from the prawn, check if there is a dark line running down the back of the prawn. This is the intestinal tract or 'vein'.
2. Hold the prawn firmly in one hand and using a small, sharp knife make a shallow cut along the length of the prawn.
3. Remove the intestinal tract using the tip of your knife and discard.
