If I was going to start my cooking channel and my first video I had to do it on salt. Once I truly understood how powerful salt was in cooking it opened my eyes to what it does and can do in the kitchen. I cooked a full dinner by using one main ingredient: salt.
In this video, I talk about salt in three ways - as an ingredient, seasoning, and tool for cooking. The three topics are 1) how it affects taste and flavor, 2) the different types of salts, but mostly how important or why you should cook with Kosher salt and 3) the scientific properties of osmosis and diffusion and how you utilize it with food. In fact, it's mainly this property I base my recipes around to make a complete and full dinner of pan-roasted chicken breast, grilled zucchini, and a salad. Everything you could want in a dinner - main, side, and salad!
The ingredients: kosher salt optional: maldon salt as a finishing salt olive oil or neutral oil of your choice for cooking (and to drizzle on the zucchini) 1 chicken breast 1 tablespoon of butter (optional) 2 zucchinis cut in half length-wise 300-500g of tomatoes (Camparis, cherry, mini-heirloom) 150-300g English cucumber (I use half, but you can always use a full cucumber) optional: radish, bell peppers, lettuce In my video, I talk about two types of brining, wet and dry and reference Ethan Chlebowski's Grilled Chicken video where he does the math for a wet brine.
