Tuna Tartare

2 pounds fresh tuna
1/4 cup coconut aminos nectar (**see below if unavailable)
3 tablespoons rice vinegar
1 tablespoon ginger
1 tablespoon dark sesame oil
1 tablespoon sesame seeds
Pinch of salt
1/8 teaspoon pepper
Op: 2 teaspoons wasabi
3 tablespoon pickled

** use instead 3 tablespoons coconut aminos or low salt soy sauce and 2 tablespoons of honey
