In this video we are making a refreshing Malaysian dish called Popiah Basah ‘Popiah’ is a unique Malaysian spring roll and ‘basah’ means wet. Therefore, Popiah Basah refers to "wet spring rolls”, which can mean either fresh or raw spring rolls. In this recipe, I am using rice paper wrappers also known as Vietnamese rice paper. Normally, popia wrappers are readily available in most supermarkets, but these may contain milk. For this recipe,the fillings are made of raw vegetables and only bean sprouts need blanching. Popiah Basah is different from the crispy fried spring rolls that we are familiar with. Unlike fried popiah, Popiah Basah has a soft, crepe-like exterior. It is a popular street food and appetiser.

Ingredients
1 cucumber, grated coarsely
1 carrot, grated coarsely
½ yam bean (jicama), grated coarsely
100g bean sprouts, blanched
100g peanuts, roasted & pounded coarsely
100g fried shallots
2 tbsp cooking oil
1 pack spring roll skin or Vietnamese spring roll skin

For Sauce
3 tbsp chilli paste (refer here for recipe:)
3 tbsp chilli sauce
4 small onions, sliced
4 cloves garlic, sliced
1 tbsp vegetarian shrimp paste (optional)
2 tbsp brown sugar
2 tbsp coconut sugar
1 tbsp tamarind, add ¼ cup water and extract juice
1 tbsp corn flour, add 2 tbsp water and make into a paste
½ tsp salt

Preparation: 20 minutes
Cooking: 30 minutes
Servings: 10-20 pieces
