Ingredients
500 grams lauki/bottlegourd, peeled and chopped and kept in a bowl of water. Taste the lauki to see it is not bitter.
1.5 cups dahi/yogurt, whisked to make smooth
2 tbsp desi ghee/clarified butter
1 tsp ginger paste
1 green chilli, chopped
1/4 tsp turmeric powder
1 tsp deghi mirch/red chilli powder
1 tsp salt
1 tbsp kasuri methi/dry fenugreek leaves
1/2 tsp garam masala
1 tsp coriander powder
1 cup of water
2 tsp hara dhania/cilantro
1 tsp jeera
1 dry red chilli, chopped into 3-4 pieces
8-10 curry leaves
