The Pantxineta is a traditional Basque dessert, a puff pastry cake with a cinnamon custard filling, decorated with flaked almonds and icing sugar.
Thermomix Custard Cream;
2 eggs
750 g milk
60 g cornstarch
170g sugar
1/2 tsp cinnamon powder
Half sling of a lemon
1 tsp vanilla extract
Place all ingredients in the Thermomix bowl 10 min /90°/ sp 4. Let it cool before filling the puff pastry.
