For the jam:
Strawberries - 500 grams/ 1 lb 2oz, hulled and halved
Sugar - 500 grams/ 1 lb 2oz
For the sponge:
Unsalted butter - 175 grams/ 6 oz, at room temperature
Caster sugar - 175 grams/ 6 oz
Eggs - 3
Vanilla extract - 1 teaspoon
Flour - 175 grams/ 6 oz
Baking Powder - 2 teaspoons
Salt - 1/2 teaspoon
Double cream - 300 ml/ 10½ fl oz
